As I entered my third month at Disfrutar, I continued working in the appetizers station, where I have been promoted to the role of first assistant. This new responsibility has allowed me to become more deeply involved in the daily operations of the kitchen, taking on a key role in production and organization of our section.
Expanded Responsibilities
As the first assistant, I am now responsible for managing the daily production of the station. This includes ensuring that all necessary ingredients are available and prepared, coordinating orders to replenish what is needed, and overseeing the organization of our production, including the management of freezers and refrigerators to maintain precise control over inventories and ensure that all products are stored correctly and at the proper temperature.
Learning in Management and Organization
This new role has given me a closer perspective on how the organization and system of production work in a top-tier restaurant like Disfrutar. I have learned to anticipate the needs of the station, managing time and resources efficiently to ensure smooth production. Additionally, I am developing key skills in inventory management, ensuring that each ingredient is used optimally, minimizing waste, and maintaining the quality expected in every dish.


Participation in an Innovative Project
One particularly exciting experience this month was my involvement in an innovative project at the restaurant. The project involved experimenting with a new technique for processing nuts, specifically walnuts, while they are still green. Unlike the conventional method, which uses mature and dried nuts, this technique aims to utilize the green walnut fully. The process included collecting nearly 150 kg of green walnuts, boiling them, and then storing them in sterilized jars with syrup to test them in six months.
This project was a fascinating experience that allowed me to understand the level of creativity, study, and work involved in culinary innovation. The process of collecting the nuts, sorting them by size, blanching them, and so forth, is long and meticulous. Although the final results will only be evaluated in six months, the experience of participating in such a significant project was deeply motivating and enriching.


Life in Barcelona
During this internship, I am staying in an Airbnb close to the restaurant, with a cost of approximately €1500 per month. The proximity to the restaurant is ideal, as it takes only two subway stops to get there. However, the metro in Barcelona can be quite chaotic, especially in the summer when the heat is unbearable. Fortunately, the bicycle has proven to be an excellent alternative, allowing me to travel more comfortably and quickly.


Barcelona is a multicultural and vibrant city, full of life and beauty. Living here has been incredible; the city offers a unique blend of culture, history, and modernity that has captivated me. I am very happy and satisfied with the opportunity to live and work in such an inspiring place. The combination of the experience at Disfrutar and life in Barcelona has been an enriching and stimulating phase in my professional career.
